Directions for making Roots Tonic

Put one 1 pound bag of roots in a large pot and add approximately 3 liters of water.  Bring to a boil and then simmer for 45 min – 1 hour. When cool enough, sweeten with honey, sugar or molasses. Sweeten to taste.  Strain roots and liquid through cheese cloth to remove vegetable material.  Store the roots tonic in glass containers.  Be sure to allow plenty of room for fermentation and release the gases regularly after 2 or 3 days.  You can refrigerate it, leave it at room temperature or heat it up for tea.
